Seared Salmon with Steamed Green Beans and Cauliflower Mash
Pan-seared wild salmon served over a creamy garlic cauliflower mash with tender-crisp green beans and a bright squeeze of fresh lemon.
INGREDIENTS
6 oz Wild Sockeye Salmon
1.5 cups Cauliflower florets
1 cup Green beans
1 tsp Avocado oil
1 tsp Ghee
1 clove Garlic
Fresh lemon wedge
Sea salt and black pepper to taste
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While cauliflower steams, trim the ends of the green beans and steam them in a separate basket for 5-6 minutes until tender-crisp and bright green.
Transfer the softened cauliflower to a food processor or blender with the ghee, minced garlic, and a pinch of sea salt; pulse until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat avocado oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side down (if applicable) and sear for 3-4 minutes, then flip and cook for another 2-3 minutes until the center is just opaque.
Spread the cauliflower mash onto a plate, top with the seared salmon, and serve the green beans on the side with a fresh squeeze of lemon.
