PREPARATION
Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
Finely mince the garlic cloves and chop the fresh rosemary and thyme leaves.
In a small bowl, whisk together half of the olive oil with the minced garlic, rosemary, thyme, salt, and pepper.
Pat the beef sirloin dry with a paper towel and rub the herb oil mixture over all sides of the meat.
Place the broccoli florets and sliced carrots on the prepared sheet pan, drizzle with the remaining olive oil, and toss to coat evenly.
Move the vegetables to the edges of the pan and place the herb-rubbed beef in the center.
