Seared Salmon with Roasted Broccoli and Garlic Mash
Pan-seared salmon served over a creamy garlic cauliflower mash with roasted broccoli florets, finished with a squeeze of zesty lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Broccoli Florets
1 cup Cauliflower florets
2 tbsp Non-fat Greek Yogurt
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil and a pinch of salt, then roast for 15-20 minutes until the edges are crisp.
While the broccoli roasts, steam the cauliflower florets and garlic cloves until very tender, about 10 minutes.
Drain the cauliflower and garlic thoroughly, then mash or blend with the Greek yogurt until smooth and creamy.
Season the salmon fillet with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 2-3 minutes until opaque and flaky.
Plate the garlic mash, top with the seared salmon, and serve alongside the roasted broccoli.
