Seared Salmon with Steamed Green Beans and Mashed Cauliflower
Pan-seared salmon fillet served over creamy mashed cauliflower with a side of bright steamed green beans, finished with a squeeze of fresh lemon and a buttery glaze.
INGREDIENTS
6.3 oz Salmon Fillet
250g Cauliflower Florets
150g Green Beans
30g Non-fat Greek Yogurt
1.5 tsp Avocado Oil
1 tsp Grass-fed Butter
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer during the last 5 minutes of cooking until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat avocado oil in a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes.
Flip the salmon and cook for another 3-4 minutes until the skin is crispy and the fish is cooked through.
Transfer the steamed cauliflower to a bowl and mash with Greek yogurt and grass-fed butter until smooth and creamy.
Plate the mashed cauliflower first, top with the seared salmon, and serve the green beans on the side with a fresh lemon wedge.
