Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic-mashed cauliflower with a side of crisp-tender green beans and a squeeze of fresh lemon.
INGREDIENTS
6 ounces Salmon Fillet
2 cups Cauliflower florets
1.5 cups Green Beans
1 tablespoon Ghee
2 cloves Garlic
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While the cauliflower steams, steam the green beans for 5-6 minutes until they are bright green and crisp-tender.
Drain the cauliflower well and mash with minced garlic, half the ghee, and a pinch of salt until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining ghee in a cast-iron skillet over medium-high heat.
Place the salmon in the pan and sear for 4 minutes until a golden crust forms, then flip and cook for another 3 minutes.
Plate the salmon over the garlic cauliflower mash and serve with the steamed green beans on the side.
