Seared Salmon with Garlic Green Beans and Steamed Brown Rice
Pan-seared salmon fillet served with crisp-tender garlic green beans and nutty brown rice, finished with a bright squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon
1/2 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Minced Garlic
1 tbsp Fresh Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions and keep warm.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is golden and crisp.
Flip the salmon carefully and cook for another 2-3 minutes until the fish is opaque and flakes easily.
In a separate skillet, heat the remaining oil over medium heat and sauté the green beans and minced garlic for 5-6 minutes until the beans are crisp-tender.
Plate the seared salmon alongside the steamed brown rice and garlic green beans.
Drizzle the fresh lemon juice over the salmon and vegetables just before serving.
