Golden Beef and Rice Stuffed Peppers
Bell peppers roasted until tender and filled with a savory mixture of lean ground beef and fluffy rice, seasoned with aromatic herbs for a comforting, golden finish.
INGREDIENTS
7 oz 93% lean ground beef
2 medium bell peppers
0.25 cup cooked white rice
1 tbsp tomato paste
0.25 cup yellow onion
1 clove garlic
0.5 tsp dried oregano
0.25 tsp sea salt
0.25 tsp black pepper
1 tbsp fresh parsley
1 tbsp water
PREPARATION
Preheat oven to 375°F (190°C).
Slice the tops off the bell peppers and remove the seeds and membranes.
In a non-stick skillet over medium heat, brown the ground beef with the diced yellow onion until the beef is cooked through.
Stir in the minced garlic, tomato paste, dried oregano, sea salt, and black pepper, cooking for another 2 minutes.
Remove from heat and fold in the cooked white rice and chopped fresh parsley.
Stuff the beef and rice mixture into the hollowed bell peppers.
Place peppers upright in a baking dish, add 1 tablespoon of water to the bottom of the dish, and cover with foil.
Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are soft and slightly charred.
