Seared Lean Beef Strips with Garlic Green Beans and Sweet Potato Mash
Cast iron-seared lean beef strips served with creamy mashed sweet potatoes and garlic-sautéed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
8 oz Lean Top Sirloin Steak, sliced into strips
150g Sweet Potato, peeled and cubed
1 cup Fresh Green Beans, trimmed
1 tsp Avocado Oil
2 cloves Garlic, minced
Salt and black pepper to taste
Fresh lemon wedge for garnish
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
While potatoes cook, season the beef strips generously with salt and black pepper.
Heat the avocado oil in a large cast-iron skillet over medium-high heat.
Add the beef strips to the hot skillet in a single layer and sear for 2-3 minutes per side until a golden-brown crust forms. Remove beef from the pan and let it rest.
In the same skillet, add the green beans and minced garlic with two tablespoons of water. Cover with a lid and steam for 3-4 minutes until the beans are bright green and tender-crisp.
Drain the sweet potatoes and mash them thoroughly, adding a splash of hot water or beef broth if needed to reach a creamy consistency.
Plate the sweet potato mash, top with the seared beef strips, and serve the garlic green beans on the side with a fresh squeeze of lemon juice.
