Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over a creamy cauliflower mash with garlic-sautéed green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6.5 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
2 tsp Ghee
2 tbsp non-fat Greek Yogurt
2 cloves Garlic, minced
1 tbsp Lemon Juice
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very soft.
While cauliflower steams, trim the green beans and mince the garlic.
Heat one teaspoon of ghee in a non-stick skillet over medium heat; add green beans and garlic, sautéing for 5-7 minutes until tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Remove green beans from the skillet and set aside; add the remaining teaspoon of ghee to the same skillet over medium-high heat.
Place salmon skin-side up in the skillet and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until opaque and flaky.
Place the steamed cauliflower in a bowl or food processor with the Greek yogurt and a pinch of salt; mash or blend until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
Drizzle the entire dish with fresh lemon juice before serving.
