Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared wild salmon served over a bed of garlicky cauliflower mash with crisp steamed green beans and a bright squeeze of lemon.
INGREDIENTS
7.2 oz Wild Salmon Fillet
1.75 cups Cauliflower florets
1 cup Green Beans
2 teaspoons Avocado Oil
1 clove Garlic, minced
1 teaspoon Lemon Juice
PREPARATION
Chop the cauliflower into small florets and steam for 10-12 minutes until very soft.
Trim the green beans and steam for 5-6 minutes until bright green and crisp-tender.
Transfer the steamed cauliflower to a bowl, add the minced garlic, salt, pepper, and one teaspoon of avocado oil, then mash until smooth.
Pat the salmon fillet dry with paper towels and season both sides with sea salt and black pepper.
Heat the remaining teaspoon of avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until a golden crust forms and the fish is cooked through.
Serve the salmon over the garlic cauliflower mash with the green beans on the side and a fresh squeeze of lemon juice.
