PREPARATION
Dice the chicken breast into small, uniform bite-sized pieces and season with sea salt and black pepper.
Heat the extra virgin olive oil in a large non-stick skillet or wok over medium-high heat.
Add the chicken to the pan and sear for 5-6 minutes, stirring occasionally, until golden brown and cooked through, then remove chicken from the pan and set aside.
Lower the heat to medium and add the toasted sesame oil, minced garlic, grated ginger, and frozen peas and carrots to the same pan.
