Crispy Kimchi Fried Rice with Pork
Sautéed ground pork and chilled rice pan-fried with spicy kimchi until the edges are golden and crispy, topped with a perfectly runny fried egg.
INGREDIENTS
6 oz Ground pork (93% lean)
0.33 cup Cooked jasmine rice
0.5 cup Kimchi
1 large Egg
1 tsp Toasted sesame oil
1 tbsp Tamari
1 clove Garlic
2 stalk Scallions
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Heat a large non-stick skillet over medium-high heat and add the ground pork, breaking it up with a spatula until browned.
Season the pork with sea salt and black pepper, then remove it from the skillet and set aside.
In the same skillet, add the toasted sesame oil, minced garlic, and the white parts of the sliced scallions, sautéing until fragrant.
Stir in the chopped kimchi and chilled rice, pressing the mixture down firmly into the pan to develop a crispy bottom layer.
Cook undisturbed for 3-4 minutes until the rice crackles, then stir in the cooked pork and tamari until well combined.
Push the rice to one side of the pan and crack the egg into the empty space, frying until the whites are set but the yolk remains runny.
Slide the crispy rice onto a plate, top with the fried egg and remaining scallion greens, and serve immediately.
