0.75 cup cooked sushi rice
2 sheets nori
0.25 whole avocado
0.5 cup cucumber

0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Slice the ahi tuna into long, thin strips and place them in a small glass bowl.
In a separate small jar, whisk together the tamari, grated fresh ginger, rice vinegar, sesame oil, sea salt, and black pepper.
Pour the marinade over the tuna strips and toss gently to coat, allowing it to sit for 5 minutes.
Place one nori sheet on a bamboo rolling mat and spread half of the cooked sushi rice evenly over the bottom two-thirds of the sheet.
Arrange half of the marinated tuna, avocado slices, and cucumber matchsticks in a horizontal line across the center of the rice.
Using the mat as a guide, roll the nori tightly from the bottom toward the top, sealing the edge with a small dab of water.
Repeat the process with the second nori sheet and remaining ingredients.
Slice each roll into eight even pieces using a very sharp, slightly damp knife and serve immediately.
