Golden Herb-Crusted Salmon with Roasted Asparagus
Oven-roasted salmon fillet topped with a fragrant, golden almond-herb crust and served alongside tender, charred asparagus spears.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus
1 tbsp Almond flour
1 tsp Dijon mustard
1 tbsp Fresh parsley
1 tsp Fresh dill
0.5 tsp Lemon zest
1 tsp Olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F and line a large sheet pan with parchment paper.
Trim the woody ends off the asparagus and place the spears on one side of the pan.
Drizzle the asparagus with the olive oil and sprinkle with half of the sea salt and black pepper.
Place the salmon fillet on the other side of the pan and brush the top surface evenly with Dijon mustard.
In a small bowl, mix together the almond flour, chopped parsley, dill, and lemon zest.
Press the herb mixture firmly onto the top of the salmon to create an even, thick crust.
Season the salmon with the remaining sea salt and black pepper.
Roast for 12 to 15 minutes until the salmon is opaque and flakes easily with a fork, and the crust is beautifully golden.
