Seared Salmon with Garlic Spinach and Sweet Potato Mash
Pan-seared salmon fillet served over a creamy sweet potato mash with garlicky sautéed spinach, finished with a squeeze of bright lemon.
INGREDIENTS
5 ounces Salmon Fillet
150 grams Sweet Potato
2 cups Fresh Spinach
1 teaspoon Olive Oil
1 teaspoon Ghee
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in salted water until tender, about 12-15 minutes.
Drain the potatoes and mash with ghee and a pinch of sea salt until smooth and creamy.
Heat half the olive oil in a skillet over medium heat, add minced garlic and spinach, and sauté until just wilted.
Pat the salmon dry and season with salt and pepper.
Heat the remaining oil in a non-stick skillet over medium-high heat.
Sear the salmon skin-side down for 4-5 minutes until crisp, then flip and cook for another 2-3 minutes.
Plate the sweet potato mash, top with the garlic spinach, and place the salmon fillet on top.
