Golden Crispy Rice with Fried Egg
Sautéed ground turkey and jasmine rice pan-fried until golden and crispy, topped with two lacey-edged fried eggs and fresh scallions.
INGREDIENTS
5 oz ground turkey 93% lean
0.25 cup cooked jasmine rice
2 large eggs
0.25 tbsp extra virgin olive oil
0.5 cup red bell pepper
1 cup baby spinach
1 tbsp tamari
0.25 tsp garlic powder
0.25 tsp onion powder
0.25 tsp sea salt
0.25 tsp black pepper
1 tbsp scallions
PREPARATION
Heat a large non-stick skillet over medium-high heat with 0.25 tbsp of the olive oil.
Add the ground turkey and diced red bell pepper, breaking the meat apart until browned and cooked through.
Season the turkey mixture with garlic powder, onion powder, sea salt, and black pepper.
Stir in the baby spinach until wilted, then remove the turkey and vegetable mixture from the pan and set aside.
In the same skillet, add 0.125 tbsp of olive oil and the cooked jasmine rice, pressing it down firmly into an even layer.
Cook the rice undisturbed for 3-4 minutes until the bottom is deeply golden and crispy, then stir in the tamari and the turkey mixture.
Push the rice to one side of the pan and add the remaining 0.125 tbsp of olive oil to the empty space.
Crack the eggs into the oil and fry until the whites are set but the yolks remain runny.
Divide the crispy rice onto a plate, top with the fried eggs, and garnish with fresh scallions.
