6.5 oz Wild Atlantic Salmon Fillet
120g Sweet Potato, peeled and cubed
1.5 cups Fresh Green Beans, trimmed
1 tsp Ghee
1 tbsp Fresh Lemon Juice

PREPARATION
Place cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until soft.
While potatoes cook, place green beans in a steamer basket over boiling water and steam for 5-7 minutes until bright green and crisp-tender.
Pat the salmon fillet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the ghee in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side up and sear for 4 minutes without moving it to create a golden crust.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Drain the sweet potatoes and mash them thoroughly with the remaining ghee and a pinch of salt until creamy.
Plate the sweet potato mash, top with the seared salmon, and serve the green beans on the side with a drizzle of fresh lemon juice over everything.
