Golden Garlic Egg Fried Rice
Sautéed chicken and day-old brown rice tossed with fragrant garlic and scrambled eggs for a savory, golden dish that is satisfyingly crisp.
INGREDIENTS
3.5 oz Chicken breast
2 large Eggs
0.5 cup Brown rice
2 cloves Garlic
1 tsp Sesame oil
1 tbsp Coconut aminos
0.25 cup Green onions
0.5 cup Peas and carrots
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Heat the sesame oil in a large skillet or wok over medium-high heat until shimmering.
Add the diced chicken breast to the pan and sauté until golden brown and fully cooked through.
Stir in the minced garlic and the frozen peas and carrots, cooking for about 2 minutes until the vegetables are tender and fragrant.
Push the chicken and vegetable mixture to one side of the pan and crack the eggs into the open space, scrambling them quickly until just set.
Add the cooked brown rice, coconut aminos, sea salt, and black pepper to the pan, tossing everything together for 3 minutes until the rice is heated and slightly toasted.
Remove from heat, garnish with the sliced green onions, and serve immediately.
