Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon served over a bed of creamy garlic cauliflower mash with tender-crisp steamed asparagus and a squeeze of bright lemon.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Cauliflower Florets
120g Asparagus Spears
1 tsp Olive Oil
2 tbsp Non-fat Greek Yogurt
1 clove Garlic
PREPARATION
Steam the cauliflower florets and garlic clove until fork-tender, approximately 10 to 12 minutes.
Transfer the steamed cauliflower and garlic to a food processor with the Greek yogurt and a pinch of salt, blending until silky smooth.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes until the skin is golden and crisp, then flip and cook for another 2-3 minutes.
While the salmon cooks, steam the asparagus for 3-4 minutes until vibrant green and tender-crisp.
Plate the cauliflower mash first, top with the seared salmon, and serve the asparagus on the side with an optional lemon wedge.
