Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet paired with garlic-scented green beans and smooth sweet potato mash, finished with a bright squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon fillet
150g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
Sea salt and black pepper to taste
Fresh lemon wedge for serving
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
While potatoes cook, season the salmon fillet with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and the center is cooked through.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining oil, green beans, and minced garlic, sautéing for 5 minutes until the beans are tender-crisp.
Drain the sweet potatoes and mash them thoroughly, seasoning with a pinch of salt.
Plate the salmon alongside the sweet potato mash and garlic green beans, finishing with a fresh squeeze of lemon juice.
