Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served over a creamy cauliflower mash with garlicky green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Green beans
2 tsp Olive oil
1 tbsp Nonfat Greek yogurt
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
Drain the cauliflower well and mash with the Greek yogurt and a pinch of salt until smooth and creamy.
Heat one teaspoon of olive oil in a skillet over medium-high heat.
Season the salmon with salt and pepper, then sear for 4-5 minutes per side until the edges are crisp and the center is cooked through.
In a separate pan, heat the remaining teaspoon of olive oil and sauté the green beans with minced garlic for 5-7 minutes until tender-crisp.
Plate the salmon atop the cauliflower mash and serve with the garlic green beans on the side.
