Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with garlic-sautéed green beans, finished with a squeeze of lemon for a bright, zesty touch.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
2 cups Cauliflower Florets
1.5 cups Green Beans
2 tbsp Nonfat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10-12 minutes.
While the cauliflower steams, pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat. Place the salmon skin-side down and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for an additional 2-3 minutes until the internal temperature reaches your desired level of doneness, then remove from heat.
In a separate small skillet, melt the ghee over medium heat. Add the green beans and minced garlic, sautéing for 5-6 minutes until tender-crisp.
Drain the steamed cauliflower thoroughly and transfer to a blender or food processor. Add the Greek yogurt and a pinch of salt, then process until smooth and creamy.
Spread the cauliflower mash onto a plate, top with the seared salmon fillet, and serve alongside the garlic green beans.
