7 oz Wild Atlantic Salmon Fillet
150g Sweet Potato, cubed
100g Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice

PREPARATION
Place the cubed sweet potatoes in a steamer basket over boiling water and cook for 12-15 minutes until very tender.
During the last 5 minutes of steaming the potatoes, add the green beans to the steamer basket to cook until they are vibrant and tender-crisp.
While the vegetables steam, pat the salmon fillet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down (if applicable) and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Transfer the cooked sweet potatoes to a bowl and mash thoroughly with a fork, adding a splash of the steaming water if needed for a smoother consistency.
Plate the salmon alongside the sweet potato mash and green beans, finishing the entire dish with a fresh squeeze of lemon juice.
