Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with tender steamed green beans and a creamy garlic cauliflower mash, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1 cup Green Beans
2 cups Cauliflower florets
2 tbsp Non-fat Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, trim the green beans and steam them separately for 5-6 minutes until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and cooked through.
Drain the steamed cauliflower and transfer to a blender or food processor.
Add the Greek yogurt, ghee, and minced garlic to the cauliflower and pulse until creamy and smooth.
Serve the seared salmon alongside the garlic mashed cauliflower and steamed green beans.
