In a medium mixing bowl, combine the ground chicken, egg, half of the grated Parmesan cheese, garlic powder, dried oregano, sea salt, and black pepper.
Mix the ingredients thoroughly until a uniform paste forms.
Transfer the mixture to the parchment-lined sheet and shape it into a rectangle approximately 1/2 inch thick.
Use a knife or pizza cutter to slice the rectangle into 6 even strips, then gently space them apart on the sheet.
Bake for 15-18 minutes until the breadsticks are firm and cooked through.
Remove from the oven, brush each stick lightly with olive oil, and sprinkle with the remaining Parmesan cheese.
Switch the oven to broil and return the tray for 2-3 minutes until the breadsticks are golden-brown and crispy.
Garnish with freshly chopped parsley and serve warm.
