Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon and garlic green beans served over fluffy brown rice, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
7 ounces Wild Salmon Fillet
0.5 cup cooked Brown Rice
1 cup Fresh Green Beans
1 teaspoon Olive Oil
2 cloves Garlic
PREPARATION
Cook the brown rice according to package instructions or warm through if using pre-cooked rice.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crisp and golden.
Flip the salmon and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork, then remove from the pan.
In the same pan, add the remaining oil and the trimmed green beans.
Sauté the green beans for 5-6 minutes until tender-crisp, adding the minced garlic during the last minute of cooking.
Serve the seared salmon alongside the brown rice and garlic green beans with a fresh lemon wedge on the side.
