Seared Salmon with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over cauliflower mash and crisp-tender green beans, finished with a squeeze of bright lemon and a touch of creamy garlic.
INGREDIENTS
7 oz Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
2 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, about 10-12 minutes.
Add the green beans to the steamer basket during the last 5-6 minutes of cooking until they are crisp-tender.
Pat the salmon fillet dry with paper towels and season both sides with a pinch of salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3 minutes until cooked through.
Transfer the steamed cauliflower to a bowl or food processor and add the remaining teaspoon of olive oil, minced garlic, and a splash of water if needed.
Mash or blend the cauliflower until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the green beans on the side with a fresh squeeze of lemon juice.
