PREPARATION
Whisk the egg in a small bowl and combine the almond flour with grated parmesan in a separate shallow dish.
Slice the mozzarella into a thick round or sticks, dip into the egg wash, then press firmly into the almond-parmesan mixture to coat all sides.
Place the bacon in a skillet over medium heat and cook until crispy, then remove and set aside on a paper towel.
