Seared Salmon with Steamed Asparagus and Cauliflower Mash
Pan-seared salmon served over cauliflower mash and tender steamed asparagus, finished with a squeeze of zesty lemon.
INGREDIENTS
8.8 oz Wild Atlantic Salmon Fillet
1 cup Asparagus spears
1.5 cups Cauliflower florets
1 tsp Ghee
1 tbsp Fresh Lemon Juice
PREPARATION
Steam the cauliflower florets until very tender, approximately 10-12 minutes.
While cauliflower steams, trim the woody ends off the asparagus and steam for 4-5 minutes until bright green and tender-crisp.
Transfer the steamed cauliflower to a blender or food processor and blend until smooth, seasoning with a pinch of sea salt and black pepper.
Heat a non-stick skillet over medium-high heat with the ghee.
Season the salmon with salt and pepper, then place in the hot skillet skin-side up.
Sear the salmon for 4 minutes, then flip and cook for another 3-4 minutes until the desired doneness is reached.
Plate the cauliflower mash, top with the salmon fillet, and serve the asparagus on the side.
Finish the dish with a fresh squeeze of lemon juice over the salmon and vegetables.
