PREPARATION
Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers and remove the seeds and membranes from the inside.
In a large skillet over medium-high heat, brown the ground beef with the diced yellow onion and minced garlic until the meat is fully cooked.
Stir in the cooked brown rice, tomato puree, dried oregano, sea salt, and black pepper until the mixture is well combined and heated through.
Stuff the beef and rice mixture firmly into the hollowed bell peppers and place them upright in a baking dish.
Add a small splash of water to the bottom of the dish and cover tightly with foil.
