PREPARATION
Heat the olive oil in a large non-stick skillet over medium-high heat.
Add the diced sweet potatoes to the skillet and cook for 8 to 10 minutes, stirring occasionally, until tender and the edges are browned.
Stir in the diced onions and bell peppers, cooking for another 3 to 4 minutes until the vegetables have softened.
