Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon served over nutty brown rice and garlic-sautéed green beans, finished with a squeeze of bright lemon and a pinch of flaky sea salt.
INGREDIENTS
6 oz Wild Atlantic Salmon
1/2 cup cooked Brown Rice
1.5 cups fresh Green Beans
2 tsp Avocado Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Pat the salmon fillet completely dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat one teaspoon of avocado oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3 minutes until desired doneness.
Remove salmon from the pan and set aside to rest.
In the same skillet, add the remaining teaspoon of oil and the green beans, sautéing for 5 minutes until tender-crisp.
Add the minced garlic to the beans and cook for 1 minute until fragrant.
Fluff the pre-cooked brown rice and place it on a plate.
Top the rice with the seared salmon and serve the garlic green beans on the side.
Finish the entire dish with a fresh squeeze of lemon juice.
