PREPARATION
Cook the sushi rice according to package directions and fold in the rice vinegar and sea salt while still warm.
Slice the fresh yellowfin tuna into long, half-inch thick strips and julienne the cucumber into thin matchsticks.
Lay a nori sheet on a bamboo rolling mat and spread half of the seasoned rice in an even layer, leaving the top inch clear.
Arrange half of the tuna, cucumber, and avocado slices in a horizontal line across the center of the rice.
Roll the mat forward firmly to create a tight cylinder, using a dab of water to seal the edge of the nori.
Slice the roll into eight even rounds using a very sharp, damp knife and serve with tamari, ginger, and wasabi.
