Seared Salmon with Garlic Green Beans and Brown Rice
Wild salmon seared until golden and served with garlic-sautéed green beans and fluffy brown rice, finished with a bright squeeze of zesty lemon.
INGREDIENTS
6.5 oz Wild Salmon Fillet
1/2 cup Cooked Brown Rice
1.5 cups Green Beans, trimmed
1 tsp Avocado Oil
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions and keep warm.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crisp.
Flip the salmon carefully and cook for another 3-4 minutes until the internal temperature reaches 145°F and the flesh is opaque.
While the salmon cooks, steam the green beans for 3-4 minutes until tender-crisp.
In a separate small pan, heat the olive oil over medium heat and sauté the minced garlic for 30 seconds until fragrant.
Toss the steamed green beans into the garlic oil and coat thoroughly.
Serve the seared salmon alongside the garlic green beans and brown rice, drizzling the fresh lemon juice over the fish before serving.
