Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served with garlicky green beans and creamy sweet potato mash, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6.5 oz Wild Salmon Fillet
180g Sweet Potato, peeled and cubed
150g Fresh Green Beans, trimmed
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Bring a medium pot of water to a boil and cook the cubed sweet potato until fork-tender, about 10-12 minutes.
Drain the potatoes and mash them until creamy, seasoning with a pinch of sea salt.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the pan skin-side down.
Sear the salmon for 4-5 minutes per side until the skin is crisp and the fish is cooked through, then remove from the pan.
Add the remaining olive oil to the same skillet along with the green beans and minced garlic.
Sauté the green beans for 5-7 minutes until they are tender-crisp and the garlic is fragrant.
Plate the seared salmon alongside the sweet potato mash and garlic green beans, serving with a fresh lemon wedge if desired.
