Golden Herb-Crusted Salmon with Roasted Asparagus
Salmon fillets roasted with a fragrant golden herb crust until flaky, served alongside crisp-tender asparagus and finished with a bright squeeze of lemon.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus
1 tbsp Dijon mustard
1 tbsp Almond flour
0.5 tsp Garlic powder
0.5 tsp Dried parsley
1 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 whole Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Snap off the woody ends of the asparagus and place the spears on one side of the baking sheet.
Drizzle the asparagus with olive oil and sprinkle with a pinch of the sea salt and black pepper, tossing to coat evenly.
Place the salmon fillet on the other side of the baking sheet and spread the Dijon mustard over the top surface.
In a small bowl, combine the almond flour, garlic powder, and dried parsley, then press the mixture firmly onto the mustard-coated salmon.
Season the salmon with the remaining salt and pepper.
Roast in the oven for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork and the asparagus is tender.
Remove from the oven and serve immediately with a fresh squeeze of lemon juice over both the fish and greens.
