6 oz Wild Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
2 tbsp Nonfat Greek Yogurt
1 tsp Olive Oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, about 10 to 12 minutes.
In the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket and cook until crisp-tender.
Transfer the steamed cauliflower to a food processor or blender; add the Greek yogurt, minced garlic, salt, and pepper, and process until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes per side, or until the internal temperature reaches 145°F and the exterior is golden brown.
Spread the cauliflower mash onto a plate, top with the seared salmon, and serve the steamed green beans on the side.
