Creamy Cajun Shrimp and Grits
Sautéed shrimp seasoned with smoky Cajun spices served over stone-ground grits that are simmered until they reach a velvety, comforting consistency.
INGREDIENTS
8 oz shrimp
0.25 cup stone-ground grits
1 cup water
2 tbsp plain non-fat Greek yogurt
0.5 cup bell pepper
0.25 cup onion
1 tsp olive oil
1 tsp Cajun seasoning
1 clove garlic
0.25 tsp sea salt
0.13 tsp black pepper
1 tbsp fresh parsley
PREPARATION
In a small saucepan, bring the water and sea salt to a boil.
Whisk in the stone-ground grits, reduce heat to low, cover, and simmer for 15-20 minutes until tender and thick.
While grits cook, heat olive oil in a large skillet over medium-high heat.
Add the diced onion and bell pepper to the skillet, sautéing for 3-4 minutes until softened.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Add the shrimp to the skillet and sprinkle with Cajun seasoning and black pepper.
Sauté the shrimp for 2-3 minutes per side until pink and opaque.
Once grits are finished, remove from heat and stir in the Greek yogurt to achieve a creamy texture.
Spoon the grits into a bowl and top with the Cajun shrimp and vegetable mixture.
Garnish with fresh parsley before serving.
