Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon served with garlic-infused green beans and fluffy brown rice, finished with a squeeze of bright lemon and a sprinkle of flaky sea salt.
INGREDIENTS
5 oz Salmon Fillet
0.5 cup cooked Brown Rice
1 cup fresh Green Beans
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions and set aside.
Trim the ends of the green beans and steam them for 3-4 minutes until tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the skin is crispy and the fish is cooked through.
Remove the salmon from the pan and add the remaining olive oil and minced garlic.
Sauté the garlic for 30 seconds until fragrant, then toss in the steamed green beans.
Cook the beans for 1-2 minutes to coat them in the garlic oil, then finish with the lemon juice.
Plate the salmon alongside the brown rice and garlic green beans, garnishing with extra lemon if desired.
