Crispy Golden Mac and Cheese Bites
Baked chickpea pasta and lean turkey bites are folded into a creamy cheese sauce and finished with a satisfyingly crunchy golden crust.
INGREDIENTS
1 oz chickpea pasta shells
4 oz ground turkey
0.25 cup non-fat Greek yogurt
0.5 oz sharp cheddar cheese
2 large egg whites
0.5 tbsp panko breadcrumbs
0.25 tsp garlic powder
0.25 tsp onion powder
0.25 tsp sea salt
0.25 tsp black pepper
0.5 tsp olive oil
PREPARATION
Preheat your oven to 375°F and lightly grease a standard muffin tin with the olive oil.
Cook the chickpea pasta shells in boiling water for 2 minutes less than the package directions until al dente, then drain.
In a non-stick skillet over medium heat, brown the ground turkey until fully cooked, breaking it into very small crumbles.
In a large mixing bowl, whisk together the Greek yogurt, shredded cheddar cheese, egg whites, garlic powder, onion powder, sea salt, and black pepper.
Stir the cooked pasta and browned turkey into the yogurt mixture until every shell is well-coated.
Divide the mixture evenly into four muffin cups, pressing down slightly to pack them.
Sprinkle the panko breadcrumbs over the top of each bite.
Bake for 15-20 minutes until the edges are golden brown and the bites are set.
Allow the bites to cool in the tin for 5 minutes before carefully removing them with a silicone spatula.
