Crispy Caramelized Onion Smash Burger
Smashed grass-fed beef patties seared to a crisp finish and topped with sweet caramelized onions on a toasted sprouted grain bun.
INGREDIENTS
8 oz Ground beef (93% lean)
0 whole Sprouted grain bun
0.5 medium Yellow onion
0 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
1 leaf Butter lettuce
1 slice Tomato
1 tsp Yellow mustard
PREPARATION
Thinly slice the yellow onion. Heat the olive oil in a non-stick skillet over medium-low heat, add the onions, and cook until soft and golden brown, approximately 10-12 minutes. Remove onions from the pan and set aside.
Divide the ground beef into two 4-ounce portions and roll them into loose balls. Season the outside of each ball with sea salt and black pepper.
Increase the skillet heat to medium-high. Place the beef balls into the hot pan and immediately use a heavy spatula or burger press to smash them down until they are very thin and wide.
Cook the patties for 2-3 minutes without moving them to develop a deep, crispy crust. Flip the patties and cook for an additional 1 minute.
While the beef finishes, place the sprouted grain bun halves cut-side down in the pan for 30-60 seconds until lightly toasted.
To assemble, place the two beef patties on the bottom bun, top with the caramelized onions, butter lettuce, tomato, and a swipe of yellow mustard before closing with the top bun.
