PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes with half of the avocado oil and roast for 20 minutes until tender and slightly browned.
While the potatoes roast, slice the turkey sausage and sauté in a non-stick skillet with the remaining oil over medium heat until golden.
Add the fresh spinach to the skillet and cook for 1-2 minutes until just wilted.
Reduce the heat to low and pour in the egg whites, stirring gently with a spatula until they are set and fluffy.
