INGREDIENTS
6 oz Wild Salmon Fillet
3 cups Cauliflower florets
1 cup Green beans
1 tbsp Ghee
2 cloves Garlic, minced
1 wedge Lemon
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
Add the green beans to the steamer during the last 5 minutes of cooking until they are crisp-tender and bright green.
Transfer the steamed cauliflower to a bowl, add the minced garlic and half of the ghee, then mash with a fork or immersion blender until smooth.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the remaining ghee in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4 minutes until a golden crust forms.
Flip the salmon and cook for another 3 to 4 minutes until the fish is opaque and flakes easily with a fork.
Serve the seared salmon alongside the garlic cauliflower mash and steamed green beans with a fresh lemon wedge on the side.
