Seared Salmon Fillet with Steamed Green Beans and Cauliflower Mash
Crispy pan-seared salmon served over a bed of velvety cauliflower mash with a side of tender green beans, finished with a bright squeeze of zesty lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Fresh Green Beans
1/4 cup Nonfat Greek Yogurt
1 tsp Avocado Oil
1.5 tsp Ghee
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat avocado oil in a non-stick skillet over medium-high heat.
Place salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached.
Transfer steamed cauliflower to a bowl or food processor; add the Greek yogurt, ghee, and a pinch of salt.
Mash or blend the cauliflower until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the steamed green beans on the side.
