6 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
2 tbsp Nonfat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor or bowl; add the minced garlic and Greek yogurt, then blend or mash until smooth and velvety.
Pat the salmon fillet dry with a paper towel and season with a pinch of salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the exterior is golden and the fish flakes easily with a fork.
