Preheat your oven to 425°F and line a large baking sheet with parchment paper.
Cut the potato into thin matchsticks, then toss them in a bowl with olive oil and half of the sea salt.
Spread the potatoes in a single layer on the baking sheet and roast for 20-25 minutes until golden and crispy.
While the potatoes roast, thinly slice the yellow onion into half-moons.
Melt the ghee in a large skillet over medium heat, add the onions, and cook for 10-12 minutes until soft and caramelized.
Slice the sirloin steak into thin strips and season with garlic powder, black pepper, and the remaining sea salt.
Push the onions to the side of the skillet, increase heat to medium-high, and sear the steak strips for 2-3 minutes per side.
Combine the crispy potato fries with the steak and onions in the skillet, tossing gently before serving warm.
