Seared Salmon with Roasted Broccoli and Garlic Mash
Pan-seared salmon paired with tender roasted broccoli and a creamy garlic-infused cauliflower mash, finished with a squeeze of bright lemon.
INGREDIENTS
5.5 oz Wild Atlantic Salmon
2 cups Broccoli Florets
2 cups Cauliflower florets
1/4 cup Non-fat Greek Yogurt
2 tsp Olive Oil
2 cloves Garlic, minced
PREPARATION
Preheat your oven to 400°F and prepare a steamer basket for the cauliflower.
Toss the broccoli florets with one teaspoon of olive oil and half of the minced garlic on a baking sheet, then roast for 15-18 minutes until the edges are crisp.
Steam the cauliflower florets until they are very tender, approximately 10-12 minutes.
While the vegetables cook, season the salmon with salt and pepper and sear in a non-stick skillet with the remaining teaspoon of olive oil over medium-high heat for 4-5 minutes per side.
In a blender or using a food processor, combine the steamed cauliflower, Greek yogurt, and the remaining garlic, blending until the mixture is a smooth and creamy mash.
Plate the salmon over a generous bed of the garlic cauliflower mash and serve with the roasted broccoli on the side.
