PREPARATION

Melt half of the ghee in a large non-stick skillet over medium-low heat.
Place the first slice of bread mustard-side up in the pan, then layer with half of the shredded cheese, half of the chicken, the baby spinach, and the tomato slices.
Top with the second slice of bread, then layer on the remaining shredded cheese and the rest of the chicken.
