Seared Salmon with Roasted Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served with crispy roasted broccoli and creamy garlic-mashed cauliflower, finished with a squeeze of zesty lemon.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Broccoli Florets
2 cups Cauliflower Florets
1 tbsp Avocado Oil
2 cloves Garlic
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the avocado oil and a pinch of sea salt, then roast for 15-20 minutes until the edges are crispy.
While broccoli roasts, steam the cauliflower florets until very tender, about 8-10 minutes.
Drain the cauliflower well and blend or mash with minced garlic and a splash of water or unsweetened nut milk until creamy.
Season the salmon with salt and pepper.
Heat the remaining avocado oil in a non-stick skillet over medium-high heat.
Sear the salmon skin-side up for 4 minutes, then flip and cook for another 3-4 minutes until the center is just opaque.
Plate the salmon alongside the garlic mash and roasted broccoli, finishing with a fresh lemon wedge if desired.
