Seared Salmon Fillet with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon fillet served over creamy mashed cauliflower with garlic-sautéed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6.5 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green beans
1 tsp Olive oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
Drain the cauliflower well and mash with a fork or immersion blender until smooth, seasoning with a pinch of salt and pepper.
Heat half of the olive oil in a skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it skin-side down in the pan.
Sear the salmon for 4-5 minutes until the skin is crisp, then flip and cook for another 2-3 minutes until desired doneness is reached.
Remove the salmon and add the remaining oil to the same skillet.
Add the green beans and minced garlic, sautéing for 3-5 minutes until the beans are tender-crisp and the garlic is fragrant.
Plate the mashed cauliflower, top with the seared salmon, and serve the garlic green beans on the side.
